Funnel Cakes

We have been making these delectable treats for years.  Not sure why it took this long for me to add this recipe here.  I like to add a bit of cinnamon to the batter, and we usually sprinkle the tops with cinnamon sugar instead of powdered sugar.  I hope you enjoy them, we sure do.

Funnel Cakes

Ingredients:

  • 2 eggs, lightly beaten
  • 1-1/2 cups milk
  • 1/4 cup packed brown sugar
  • 2 cups all-purpose flour
  • 1-1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp cinnamon (optional)
  • Oil for deep frying
  • Confectioners' sugar or powdered sugar to sprinkle on top


Instructions:

  • In a large bowl, combine the eggs, milk and brown sugar. In a separate bowl combine flour, baking powder, cinnamon and salt; beat into egg mixture until smooth.
  • In an electric skillet, deep fryer or sauce pan, heat oil to 375°. Cover the bottom of a funnel spout with your finger; ladle 1/2 cup batter into funnel. Holding the funnel several inches above the skillet release finger and move the funnel in a spiral motion until all of the batter is released.
  • Fry for one minute on each side or until golden brown. Drain on paper towels. Repeat with remaining batter. Dust with confectioners' sugar or cinnamon sugar; serve warm. Makes 6 funnel cakes.
