Ingredients:
- 2 Tbs bacon drippings
- 1 1/2 pounds stew beef, cubed
- 4 Tbs flour or Wondra
- 2 - 3 cloves garlic, minced
- 1 Tbs dry mustard
- 2 - 12 oz bottles Guiness
- 2 cups beef broth
- 1 bay leaf
- 1 tsp oregano
- 1 tsp marjoram
- 2 large onions, cut into large dice
- 1 red pepper, cut into large dice
- 1/4 pound fresh mushrooms, sliced (optional)
- Flour for thickening
Instructions:
- Heat drippings in a large saucepan, and brown meat.
- Mix in four, garlic, dry mustard, stout, broth, bay leaf, oregano, and marjoram. Bring slowly to a boil, cover and simmer for 2 1/2 hours.
- Add Onion, pepper and mushrooms, and continue to cook for another 1/2 hour. Season to taste, and thicken the stew with additional flour.
Notes:
- We usually add potatoes, celery, peas, and carrots to this recipe to make a nice hearty stew.
