Chocolate Chip Cookie Pie

This one is by request. I think this Chocolate Chip Cookie Pie Recipe is what Becky was asking for. Does this really goes with the chili recipe you sent?  This is one of my favorite quick and easy dessert recipes. 

Ingredients:

  • 2 eggs
  • 1/2 cup flour
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 3/4 cup butter, softened
  • 1 tsp vanilla
  • 1 (6 oz.) pkg. semi-sweet chocolate chips
  • 1 cup chopped walnuts (optional)
  • 1 (9-inch) unbaked pie shell

Instructions:

  • Preheat oven to 325 degrees.
  • In large bowl, beat eggs until foamy.
  • Add both sugars. Beat until well blended.
  • Add butter and flour, mixing well.
  • Add vanilla, chips and walnuts, mix lightly.
  • Stir in chocolate chips and nuts.
  • Pour into pie shell. Bake at 325 degrees for 45 to 50 minutes.
  • Serve warm with whipped cream or ice cream.

Movie Night

So Brenda has had free movie tickets to the new Bow-Tie theater in Schenectady for a while. There really hasn't been much that I have wanted to see, and there always seems to be other things to do in the summertime. Now that the weather has gotten colder we are finally going to set some time aside this week to go to a movie! Wednesday night is movie night!!! I think we are going to see Dan in Real Life.


Synopsis:
Love strikes in the worst-possible circumstances for widower, single dad and popular family advice columnist Dan Burns (Steve Carell) when he falls for a beautiful stranger named Marie (Juliette Binoche) in a bookshop – only to discover she's the very same woman his charismatic brother (Dane Cook) is about to introduce as his incredible new girlfriend at their parents' annual get-together. As the weekend gets underway, Dan and Marie scramble to hide their mutual attraction to each other, resulting in a series of hilariously awkward situation
Seems like it will be a chick-flick, but Steve Carell is usually pretty entertaining. I'll let you know what I think of it next week. Unless for some reason we don't actually get out to the movies (again.)

Stranger than Fiction

Synopsis:
Will Farrell stars as Harold Crick, a lonely IRS agent whose mundane existence is transformed when he hears a mysterious voice narrating his life. With the help of Professor Jules Hilbert (Dustin Hoffman), Harold discovers he's the main character in a novel-in-progress and that the voice belongs to Karen Eiffel (Emma Thompson), an eccentric author famous for killing her main characters in creative ways. Harold must quickly track down Eiffel and stop her before she conjures up a way to finish him off.

Okay, so this is by no means a new movie. In fact we picked it up on the discount rack at blockbuster the other night. I was expecting a typical Will Ferrell comedy that really inspired no thought or introspection at all. Instead I was pleasantly surprised by this thought provoking movie. As the story develops with Harold leaving behind a life of boredom and "rut" to finally live his life with a great amount of enthusiasm, and vigor, it reminded me of so many other people in this world who just settle for the mundane and never really explore what living would really be like. I recommend picking up the dvd if you haven't already seen it.

I know this is not my typical kind of post, but this movie kind of inspired me. Maybe next week I will review a relatively new movie.

Happy Thanksgiving

Well we had our annual early Thanksgiving celebration this Sunday at Mom's house.  It was great as usual.  We had a little controversial discussion at dinner, argued about politics a little, and played pictionary afterwards.  Mom made the traditional dinner.  It was all good.

For the real Thanksgiving, I think Brenda and I will be up at the lake.  We'll probably cook a small turkey breast with our Brine Recipe.  It's nice for the two of us to spend some time up there alone now and then.  Nickie and Joe will be working in Lake Placid with the Stars on Ice Show, so maybe we'll get to see them, and the show.

The weather looks good for this weekend.  I can't wait to get back to the lake, and just relax.  Although if the weather is good, I'll probably either work on the bar some more, or we will get out in the kayaks again.

New Website

I have started a new website... rwysy.com  (Retire While You're Still Young)

I built it mostly to motivate myself to get going on our retirement planning, but hopefully it will also help to motivate others to do the same.  I have set a very aggressive goal for myself to be able to retire, and really enjoy retirement at 50.  Will we be able to do it?  I hope so, but for now that site is there to share information that I find, and to serve as a reminder to me that I don't want to work for someone else forever.  Oh, and hopefully it will be such a success on the Internet with so many subscribers that I can actually use the site to make money.  So it may actually help me to attain my goals.  Go check it out, and let me know what you think.
