Ingredients:

1 clove of garlic

Salt

1 Tbs Dijon mustard

1 Tbs white wine vinegar

fresh cracked black pepper

1/4 cup extra virgin olive oil
Instructions:

Finely chop 1 small clove garlic; sprinkle generously with salt. Use knife blade to smash garlic into cutting board, forming a paste.

Transfer garlic paste to a small bowl with Dijon mustard and white wine vinegar; season with pepper.

While whisking, gradually pour in olive oil until emulsified.
